Ingredients

Servings
  • 2 cups rolled oats
  • 1 teaspoons cinnamon
  • ½ tsp ginger
  • ¼ tsp clove
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1 cup grated zucchini
  • 1 and 1/4 cups milk
  • 2 large eggs
  • 4 tbsp melted butter
  • 2 teaspoons vanilla
  • 1/3 cup maple syrup

Instructions

  1. Preheat oven to 350 degrees F. Spray a 1.5 quart baking dish with cooking spray, set aside.
  2. Add oats, spices, baking powder and salt to a medium bowl. Stir together to combine.
  3. Add the remaining ingredients, stir until well mixed.
  4. Pour mixture into prepared baking dish. Bake for 35 to 40 minutes, until edges are turning golden brown and center is set.
  5. Remove from oven and allow to cool for at least 10-15 minutes before slicing into squares and serving.

Notes

  • Can be made ahead of time and reheated. To make ahead, allow to cool completely before storing in an airtight container in the refrigerator for  up to 3-4 days. Reheat in the microwave or in the oven tightly wrapped to keep it from drying out.
