Ingredients
Zucchini Cake:
- 2 cups sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 1/2 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1/4 teaspoon allspice
- 2 cups zucchini , shredded
- 1 cup walnuts , finely chopped
Cream Cheese Frosting:
- 8 ounces cream cheese softened
- 1/4 cup unsalted butter softened
- 2 tablespoons sour cream
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
Instructions
Zucchini Cake:
- Preheat oven to 350 degrees and spray a 9x13 baking pan with baking spray.
- In a large bowl or stand mixer add the sugar, vegetable oil and eggs until well combined.
- Into the large bowl sift together the flour, cinnamon, salt, baking powder, baking soda, nutmeg and allspice.
- Whisk until just combined.
- Add in the zucchini and walnuts and stir until combined.
- Spread batter in the baking pan and bake for 35-40 minutes until a toothpick comes out clean.
Cream Cheese Frosting:
- Add the cream cheese, butter, sour cream and vanilla to a stand mixer and beat until light and fluffy.
- Add in the powdered sugar one cup at a time until smooth and incorporated.
- Spread over cooled cake.
