  • 3 cups grated zucchini
  • 2 large eggs
  • 1 1/3 cups granulated sugar
  • 1 tsp vanilla extract
  • 3/4 cup unsalted butter melted
  • 2 3/4 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/3 tsp salt
  • 1 cup chocolate chips
  • 1 cup walnuts (optional)

Instructions

  1. Grate the zucchini and set it aside.
  2. In a large bowl, whisk eggs, sugar, and vanilla extract together.
  3. Stir in grated zucchini and melted butter.
  4. In a separate bowl, combine the dry ingredients (flour, baking soda, baking powder, salt, and cinnamon).
  5. Fold the dry ingredients into the wet zucchini mixture.
  6. Add in the chocolate chips and walnuts (optional). Stir to combine.
  7. Line muffin pan with paper liners. Fill each mold to the top with batter.
  8. Bake at 350°F for 30 minutes, or until a toothpick inserted into the center of each muffin comes out clean and the outside is golden brown. Let muffins cool for 5 minutes. Enjoy!
