Description

Ingredients
- 1 Large zucchini or 2 small courgette (zucchini, cut into thin ribbons with a vegetable peeler or mandoline
- ½ c hazelnut
- ½ c feta cheese crumbled
- 1 teaspoon lemon zest
- 2 tablespoon lemon juice
- 4 tablespoon extra virgin olive oil
- ½ teaspoon salt
- ½ teaspoon sugar
- ¼ teaspoon pepper fresh

Instructions
- In a small bowl, mix together lemon zest and juice, olive oil, salt, sugar and pepper. Whisk well and season to taste with extra salt and pepper.
- Place zucchini ribbons or chunks in a large bowl. Add nuts, feta and herbs if using. Drizzle lemon dressing over top, toss gently and serve right away.
Notes
- Toss the salad only just before serving to preserve the zucchini's crisp texture and appearance.
