  • 1 Large zucchini or 2 small courgette (zucchini, cut into thin ribbons with a vegetable peeler or mandoline
  • ½ c hazelnut
  • ½ c feta cheese crumbled
  • 1 teaspoon lemon zest
  • 2 tablespoon lemon juice
  • 4 tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • ¼ teaspoon pepper fresh
  • basil For Garnish, optional or mint or parsley

Instructions

  1. In a small bowl, mix together lemon zest and juice, olive oil, salt, sugar and pepper. Whisk well and season to taste with extra salt and pepper.
  2. Place zucchini ribbons or chunks in a large bowl. Add nuts, feta and herbs if using. Drizzle lemon dressing over top, toss gently and serve right away.

Notes

  • Toss the salad only just before serving to preserve the zucchini's crisp texture and appearance.
  • The salad remains tasty the next day but will not look as fresh due to wilting.
