Description
This recipe features jumbo courgette (zucchini) sliced into rounds, lightly oiled, and grilled briefly on each side to soften and slightly char the vegetable while retaining some bite. Each courgette slice is topped with canned chopped tomatoes seasoned with garlic powder and oregano before adding a generous sprinkle of mature cheddar cheese. Fresh chopped basil is added last to introduce herbal brightness.
The assembled bites return under the grill for a few minutes until the cheese melts and bubbles, creating a cheesy topping contrast to the tender courgette. The garlic powder and oregano add classic pizza seasoning notes. Fresh basil garnish adds a fresh aroma and flavor finish.

Ingredients
- 1 courgette cut in to circles, jumbo
- 10 tablespoon tomato canned, chopped
- 40 g cheddar cheese mature
- 1 teaspoon oregano dried
- 1 teaspoon garlic powder
- 15 g basil finely chopped, fresh
Instructions
- Put 1 Jumbo courgette on a baking tray and spray with a little oil. Put them under the grill for 2 minutes each side.
- Take them out of the grill and divide 10 tablespoon Chopped tomatoes to each circle.
- Sprinkle over 1 teaspoon Garlic powder and 1 teaspoon Dried oregano.
- Add 40 g Mature cheddar.
- Sprinkle 15 g Fresh basil on top.
- Put them back under the grill for 3 minutes, until the cheese bubbles.
Notes
- Substitute courgette with aubergine, tomatoes, or Portobello mushrooms as bases if desired.
- Due to size constraints, limit toppings; finely chopped onions, spinach, or chorizo work well under the cheese.
- Cheddar can be replaced with Parmesan or goat cheese for variation in flavor.
- Serve alongside homemade potato wedges for a more filling meal.
