Description
Zuppa Toscana combines sweet or spicy Italian sausage browned in a large pot with diced onions sautéed until soft. Thinly sliced red potatoes are then added along with chicken stock to cook until tender. The soup is finished by stirring in half and half and roughly chopped kale, which wilts gently without losing its structure. Salt and black pepper season the broth to taste.
The soup offers a balance of savory sausage flavor, creamy broth, tender potatoes, and slightly crisp greens. It can be served as a warming first course or a full meal in colder months. The use of half and half provides a moderate creaminess without overwhelming richness.

Ingredients
- 1 lb. Italian sausage sweet, mild, or hot is fine, casings removed if in links
- 1 yellow onion diced, large
- 1 lb. red potatoes thinly sliced to about 1/4" (or larger potatoes, quartered, then sliced, baby
- 6 cups chicken stock or broth
- 1 cup half and half whole milk or cream can also be used
- 1 cup kale spinach or other greens, like beet, can also be used, roughly chopped
- salt Kosher, to taste
- black pepper Kosher, to taste
Instructions
- Brown 1 lb. Italian sausage in a large pot, such as a Dutch Oven, over medium heat.
- When the sausage is fully cooked, add the diced 1 large yellow onion and sauté until softened (about 3 minutes).
- Add the sliced 1 lb. baby red potatoes and potatoes and 6 cups chicken stock/broth; cook for approximately 20 minutes (or until potatoes are cooked).
- Add 1 cup half and half , 1 cup roughly chopped kale , and kosher salt and black pepper to taste and heat until kale wilts and soup is heated through, approximately 5 minutes. Enjoy!
Notes
- This soup reheats well but is not recommended for freezing, as freezing changes the texture of the potatoes.
- For a dairy-free alternative, substitute half and half with full-fat unsweetened coconut milk.
