Description

The recipe combines a simple sauce of peanut butter, spicy red pepper flakes (Sichuan or Korean gochugaru), soy sauces, black vinegar, green onion, garlic, sesame seeds, and sugar. Hot vegetable oil is briefly heated and poured over the sauce ingredients to release aroma and meld flavors.

Wheat ribbon noodles are cooked until al dente without rinsing afterward, preserving starch to help the sauce cling. The hot noodles are then mixed thoroughly with the spicy peanut sauce to evenly coat them.

  • 8 oz wheat noodles dried flat or ribbon kind
  • ¼ cup vegetable oil or any neutral oil

Sauce:

  • 2 tablespoon peanut butter smooth kind
  • 1 ½ tablespoon Sichuan red pepper flakes or gochugaru (Korean hot pepper flakes)
  • 1 ¾ tablespoon soy sauce regular
  • 1 tablespoon dark soy sauce
  • 1 teaspoon Chinese black vinegar aka Chinkiang vinegar
  • 1 green onion finely sliced
  • 1 clove garlic minced
  • ½ tablespoon sesame seeds
  • 1 teaspoon granulated sugar white

Instructions

  1. In a large ceramic/glass/steel bowl, combine the sauce ingredients as listed and set aside.
  2. Then heat vegetable oil in a saucepan on medium heat for 30-60 seconds. Insert a wooden utensil into the oil and when you see bubbles form, pour the hot oil over the sauce ingredients. Then mix the sauce until well combined.
  3. Next in a medium pot of water, bring to a boil on medium-high heat. Boil ribbon wheat noodles for 3-5 minutes until al dente. Strain immediately and do not rinse off with cold water.
  4. Finally transfer the hot noodles into bowl with sauce and mix until each noodle is coated in hot sauce. Enjoy!
