This spicy smacked cucumber salad combines crunchy mini cucumbers smashed and sliced thickly, then drained and rinsed to reduce excess water and salt. Description

The salad begins by removing the ends from mini cucumbers, then flattening them with the side of a knife to break down the flesh slightly. The cucumbers are sliced into 2 cm diagonal pieces to create a pleasing texture. Salt is massaged into the cucumbers to draw out water, which is then discarded.

After rinsing and draining to remove excess salt, the cucumbers are tossed with a dressing made from soy sauce, sesame oil, Chinese black or alternative vinegar, minced garlic, white sugar, sesame seeds, and chili oil for heat. This process balances crispness with umami and spice.

This salad offers a refreshing side that complements many dishes with its cool crunch, warmth from chili oil, and nutty sesame undertones. It is suitable for quick preparation and serving chilled or at room temperature.

  • 6 cucumber mini
  • ½ teaspoon salt to drain water

Dressing

  • 2 tablespoon soy sauce regular
  • 1.5 tablespoon sesame oil
  • 1 tablespoon Chinese black vinegar or rice vinegar or apple cider vinegar
  • ½ tablespoon sesame seeds
  • 1 tablespoon granulated sugar white
  • 1 clove garlic minced
  • 1 tablespoon Chili oil Chinese style

Instructions

  1. Slice the ends off the mini cucumbers. With the side of the knife, smash cucumbers a few times until they’re a bit flattened and broken down the centre.
  2. Slice cucumbers on an angle into 2-cm thick diagonal strips.
  3. Transfer sliced cucumbers to a bowl. Add salt and massage the salt into the cucumbers. Allow cucumbers to sit in salt for 5-10 minutes to draw out excess liquids. Discard liquid.
  4. Rinse cucumbers under cold running water to remove excess salt or it'll be too salty.
  5. Strain the rinsed cucumbers removing as much excess water as possible.
  6. Season strained cucumbers with sauce ingredients and mix well. Enjoy!
