10-minute Easy Scallion Oil Noodles
Description
"10-minute Easy Scallion Oil Noodles" features fresh or dried wheat noodles cooked until just al dente, then cooled to stop cooking. Meanwhile, scallions cut into fine strips and minced garlic are fried in vegetable oil until soft and aromatic. The noodles are added back to the pan with water and mixed well to combine with the scallion oil. A sauce made of regular soy sauce, dark soy sauce, honey, sesame oil, and chicken bouillon powder is poured over, coating the noodles. Stirring continues until some sauce evaporates and the noodles are evenly flavored.
The resulting dish combines a pleasing chewy texture of noodles with a savory, sweet, and slightly umami-rich sauce. The fried scallions and garlic add mild pungency and aroma, enhancing the noodles without overpowering them. The sauce's slight thickness helps it cling well to each strand.
This noodle dish is well suited for a fast lunch or casual dinner and can be served alone or with simple stir-fried vegetables or proteins on the side.
Ingredients
- 14 oz wheat noodles or sub with dried wheat noodles and cook according to package directions, fresh thin
- 3 tablespoon vegetable oil or any neutral tasting oil
- 3 cloves garlic minced
- 1 cup green onions
- 2 tablespoon water
Sauce:
- 1.5 tablespoon soy sauce regular
- 1.5 tablespoon dark soy sauce
- 3 tablespoon honey or any sweetener of choice
- 1 tablespoon sesame oil
- 1 teaspoon chicken bouillon powder aka chicken stock powder
Instructions
- Slice green onions into 2 inch long pieces and slice each segment into very thin strips by dragging the tip of your knife along the onion from top to bottom.
- In a small bowl, combine regular soy sauce, dark soy sauce, sesame oil, honey and chicken bouillon powder. Set aside.
- In a large pot of water over high heat, bring water to boil. Once boiling, add fresh thin wheat noodles and cook for 30 seconds until al dente or cook according to package instructions. Do not overcook them.
- Strain noodles and rinse off with cold water to stop the cooking process.
- In a large pan over medium heat, add vegetable oil, scallions, garlic and fry until softened, about 2 minutes.
- Add in the noodles followed by water and mix.
- Pour in Sauce. Mix into noodles until well coated and some of the sauce has evaporated. Remove off heat and enjoy!
