10 Minute Mushroom Pasta - a fab family meal!
Description
Start by cooking fusilli pasta until al dente, then set aside. Meanwhile, mushrooms are sliced and fried in rapeseed oil with minced garlic until golden and tender. Cream cheese and tomato chili pesto are stirred in with freshly ground black pepper, heated through to create a creamy sauce. The cooked pasta is added back to the pan and tossed, ensuring each piece is well coated with the flavorful mixture.
The dish's texture is creamy and smooth from the cream cheese, with the mushrooms providing a tender bite and the pesto adding a hint of heat and herbaceousness. Ingredients
- 350 g fusilli pasta or other pasta shapes
- 2 tbsp rapeseed oil
- 2 tsp garlic from a jar, minced
- 250 g mushrooms sliced
- 200 - 250 g cream cheese light, low fat
- 8 - 9 tbsp pesto tomato and chilli flavor
- black pepper freshly ground
Instructions
- Cook the pasta according to their instructions.
- Meanwhile heat the oil over a medium heat in a large non stick wok style pan.
- Add the minced garlic and mushrooms and fry for about 6 minutes turning occasionally until cooked through and started to turn golden.
- Stir in the cream cheese, pesto and pepper and heat through for 4 minutes.
- Tip in the cooked pasta and toss to coat.
- Serve with a mixed salad.
Notes
- Use an egg slicer to quickly and evenly slice mushrooms, speeding up preparation.
