10 Minute Peanut Noodles
Description
This recipe prepares soba noodles in boiling water for a precise 3 minutes and 30 seconds to avoid mushiness. The noodles are then combined immediately with a rich sauce made from peanut butter, peanut oil, soy sauce, seasoned rice vinegar, honey, lime juice, chili garlic sauce, ground ginger, and garlic powder. The warm noodles absorb the sauce well, with starchy cooking water helping to loosen the mixture.
The dish is topped with chopped salted peanuts for texture, diced green onions, and freshly minced cilantro. Optional sriracha can be added for extra heat. The combination provides a balance of creamy, tangy, and spicy flavors with a smooth and slightly crunchy texture contrast.
This noodle recipe is appropriate as a quick lunch or light dinner, served hot or cold. Careful cooking time and immediate mixing help maintain noodle texture. Adjustments with different noodles or sweeteners are possible, though specific ingredient recommendations help preserve the intended flavor and texture. The use of seasoned rice vinegar and chili garlic sauce enhances the taste complexity.
Ingredients
- 8 oz soba noodles
- 1/3 cup peanut butter approximately 3 oz, creamy
- 1 tablespoon peanut oil
- 1/4 cup soy sauce
- 1 tablespoon seasoned rice vinegar
- 1 tablespoon honey
- 1 teaspoon Chili garlic sauce
- 1 teaspoon lime juice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 1/2 cup peanuts chopped, salted
- 1/3 cup green onions diced
- 1/4 cup cilantro minced, fresh
Instructions
- Add a large pot of unsalted water to stovetop and heat on high to bring to a boil.
- Meanwhile, in a medium to large sized bowl, add peanut butter, honey, soy, peanut oil, rice vinegar, lime juice, chili garlic sauce, ground ginger, and garlic powder. MIx well into a creamy thick sauce.
- Once the sauce is made and water is boiling, add the soba noodles and let boil for 3 1/2 minutes.
- Drain noodles, give just one shake in the colander and then immediately add them to the sauce - a little bit of the cooking liquid will help loosen the sauce a bit and help coat the noodles with the sauce.
- Mix well with tongs ensuring that all of the noodles are coated in the peanut sauce.
- Top with peanuts, green onions, and cilantro. Add sriracha if desired. Serve hot or cold.
Notes
- Cook soba noodles precisely for 3 minutes 30 seconds to avoid overcooking and mushiness.
- Drain noodles and add immediately to peanut sauce to help sauce adhere better and keep noodles from sticking.
- Use seasoned rice vinegar for more balanced flavor in the sauce.
- Maple syrup or brown sugar can substitute honey if needed.
- Fresh minced garlic and ginger can replace ground forms in the sauce with appropriate quantities.
- Sriracha can be added for additional heat according to taste.
