Description
The 10 Minute Summer Berry Galette starts with a rolled pie crust placed on a baking sheet. A mixture of strawberry or raspberry jam is warmed briefly and combined with cornstarch and sugar. Fresh berries including strawberries, blueberries, raspberries, and blackberries are gently stirred into this jam mixture, which is spooned onto the center of the crust, leaving space around the edges.
The crust edges are folded over the berry filling in loose pleats to make a freeform tart. A sprinkling of sugar on the crust edges enhances browning and adds a touch of extra sweetness. The galette bakes until the crust is golden and the filling thickens and bubbles slightly, offering a balance of tart and sweet flavors with the natural texture of fresh berries.
This galette is served warm or at room temperature and pairs well with vanilla ice cream or frozen custard for a light fruit dessert that’s visually appealing and easy to prepare without specialized pastry skills.
Ingredients
- ¾ cup strawberry jam or raspberry jam
- 4 teaspoons corn starch
- 1 tablespoon sugar plus more for sprinkling
- ¾ cup strawberries sliced
- ¾ cup blueberries
- ½ cup raspberry
- ½ cup blackberry
- 1 pre-packaged rolled pie crust (I use Pillsbury)
Instructions
- Preheat oven to 375˚F. Line a sheet pan with parchment paper
- Place jam in a microwave-safe, medium-size bowl. Microwave on high power for 30 seconds to “loosen” jam. Add cornstarch and sugar. Stir to combine.
- Add fruit to jam mixture and stir gently to combine.
- Unroll pie crust and place on prepared sheet pan.
- Transfer fruit and jam mixture to center of pie crust. Spread out in an even layer to within 1 ½ inches of edges. (see Café Tips above in post.)
- Bring edges of pie crust over fruit, pleating every couple of inches. Sprinkle edges of crust with 1 teaspoon sugar.
- Bake for 15-20 minutes or until golden brown. (see Café Tips above in post.) Serve warm or at room temperature with a scoop of vanilla ice cream or frozen custard, if desired.
