S'mores Bars combine a graham cracker crust with layers of mini marshmallows and milk chocolate chips, baked to create a gooey, sweet dessert bar. Description

These S'mores Bars start with a base made from crushed graham crackers mixed with melted butter and a pinch of salt, pressed into a baking pan and baked to create a sturdy crust. Mini marshmallows are layered over the crust and baked until puffed and slightly browned, then allowed to cool briefly to settle. A layer of milk chocolate chips follows, melting into a rich, smooth filling. The final layer consists of the remaining marshmallows and graham cracker crumbs, baked again to develop a golden, toasted surface with a contrast of textures.

The bars are cooled completely at room temperature to firm up, making them easier to slice. This dessert presents a handheld treat that blends crunchy, chewy, and creamy elements reminiscent of the traditional s'mores campfire snack.

For warmer kitchens, cooling can be accelerated in the refrigerator briefly but prolonged refrigeration may toughen the marshmallow layer.

  • 30 graham crackers , 2 packs, crushed to crumbs
  • 1 cup butter melted, unsalted
  • 1/4 teaspoon salt
  • 16 ounces mini marshmallows , 6 cups
  • 12 ounces milk chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix graham cracker crumbs (set aside 1/4 cup of the graham cracker crumbs), butter and salt.
  3. Press mixture into 9x13 pan and bake 10 minutes.
  4. Top with 4 cups of the mini marshmallows and bake for 10 more minutes.
  5. Let cool for 5 minutes to let the marshmallows deflate.
  6. Add the whole bag of milk chocolate chips in an even layer.
  7. Top with remaining marshmallows and graham cracker crumbs and bake for 10 more minutes.
  8. Let cool completely before slicing. See note below.

Notes

  • Allow the bars to cool completely at room temperature (about an hour) before slicing for cleaner cuts.
  • In warm kitchens, chill the bars briefly in the refrigerator to speed cooling, then bring to room temperature before serving.
  • Avoid extended refrigeration as it can make the marshmallow layer tough and chewy.
