Description
15 Bean Soup (Crockpot) combines a mix of northern, pinto, lima, blackeye, garbanzo, split peas, kidney, lentils, and other beans soaked overnight to soften. The beans cook slowly with a smoked ham bone adding depth, along with diced tomatoes, chicken stock, and a blend of carrots, celery, onion, garlic, thyme, and black pepper. The low-and-slow method allows flavors to meld and beans to become tender without disintegrating.
The soup offers a comforting mix of textures with creamy beans and softened vegetables, balanced by a savory, smoky broth. The soy sauce and herbs bring subtle umami undertones. This soup is great served warm as a filling lunch or dinner and pairs well with crusty bread or simple salads.

Ingredients
- 20 ounces 15 bean blend picked over and rinsed
- 1 medium onion diced
- 6 cloves garlic minced
- 4 carrot sliced into rounds (approx. 2 cups
- 4 talks celery chopped (approx. 1 cup)
- 1 ham bone smoked
- 1 teaspoon black pepper coarsely ground, cracked
- 2 teaspoons thyme dried
- 2 bay leaf
- 1/4 cup soy sauce
- 6 cups chicken stock
- 14.5 oz can diced tomatoes
Instructions
- Add beans to a large bowl or pot, and cover with 8 cups of water. Leave overnight. Discard the soaking water.
- Combine onion, garlic, carrots, celery, black pepper, thyme, bay leaf, soy sauce, chicken broth, and diced tomatoes in slow cooker. Add the hambone in too.
- Add beans to slow cooker, mix well, and cook on low for 8-10 hours.
- Remove ham bone and bay leaves from soup, discard.
- Devour.
Notes
- Soak the beans overnight and discard soaking water to reduce cooking time and improve digestibility.
- Use any smoked ham bone or leftover ham for added smoky flavor if ham bone is unavailable.
- Assemble ingredients ahead, except for the ham bone and soaked beans, and refrigerate until slow cooking.
