Description

15 Minute Garlic and Herb Spaghetti involves boiling spaghetti until tender yet firm to the bite, then draining it while reserving some cooking water. The pasta is returned to the pan and quickly mixed with olive oil, crushed garlic cloves, fresh lemon juice, and a pinch of sea salt and black pepper. Freshly chopped basil and parsley are stirred in to impart herbal freshness.

The reserved pasta water helps create a light sauce that clings to the noodles, enhancing the overall texture. The resulting dish is aromatic with garlic, brightened by lemon, and bright green from the herbs.

  • 140 g spaghetti
  • 2 tablespoon olive oil
  • 1 lemon (juice only)
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 4 garlic crushed, clove
  • 40 g basil finely chopped, fresh
  • 40 g parsley finely chopped, fresh
  • 50 ml pasta water

Instructions

  1. Add the spaghetti to a pan of boiling water and simmer for 12 minutes.
  2. Drain the spaghetti (reserving a little of the water) and then put it back in the pan and add the rest of the ingredients. Mix well and serve.

Notes

  • Save some pasta water before draining to help form the sauce; if forgotten, boiled water can be substituted.
  • Add red chili flakes for those preferring a spicy kick.
  • Serving suggestions include extra Parmesan, fresh parsley, and cracked black pepper.
  • Cook spaghetti to al dente to prevent mushiness.
  • For a richer flavor, melt some butter into the finished spaghetti if desired.
