15 minute Hidden Vegetable Pasta Sauce
Description
The 15 minute Hidden Vegetable Pasta Sauce combines several chopped raw vegetables such as onion, garlic, celery, carrot, bell pepper, and courgette along with canned chopped tomatoes and fresh basil. These ingredients are blended until smooth in a suitable blender and cooked briefly to meld the flavors. The resulting sauce has a subtle sweetness from the vegetables and herbs, balanced by the acidity of the tomatoes. The use of raw vegetables enhances freshness, while the short cooking time preserves their flavor and nutrients.
This sauce can be stirred into cooked wholewheat spaghetti or other pasta varieties and topped with grated parmesan cheese or vegan alternatives along with extra fresh basil. It also functions well as a pizza sauce or as a base for layered dishes like lasagne or for recipes such as bolognese or chili. The sauce can be portioned and frozen for convenient future use.
When using a regular blender or food processor, blend the ingredients and then warm the sauce on the stovetop before serving. Some blenders may struggle with raw vegetables; users should consult their appliance guidelines. The recipe’s nutrition information pertains to one portion of sauce alone, excluding the pasta.
