  • 1 ¾ lbs large shrimp peeled and deveined, or extra large shrimp or prawns
  • 2+ 2 tablespoon butter
  • 1 tablespoon olive oil
  • 4 cloves garlic finely chopped/minced
  • salt to taste
  • black pepper to taste
  • ½ teaspoon red chili flakes
  • lemon juice of 1
  • 1 tablespoon water can use 2 tablespoon dry white wine instead, if needed
  • parsley fresh, for garnish

Instructions

  1. Clean and de-vein shrimps if they aren’t already cleaned. Leave the tail on if you prefer. Pat the shrimp dry.
  2. Melt butter and olive oil in a pan.
  3. Sauté finely minced garlic in the butter-olive oil mix. I always prefer to sauté garlic in oil, as it releases all its wonderful flavors into the oil. Do not brown garlic. Simply sauté until the garlic is fragrant. Alternatively – use garlic powder instead of fresh garlic.
  4. Add cleaned shrimps to the pan.
  5. Add salt, pepper, and red chili flakes.
  6. Stir well.
  7. Cook for 2 to 3 minutes or until shrimp is pink in color.
  8. Flip and cook the shrimp for another minute.
  9. Turn off the heat. Add butter and lemon juice. Stir to melt butter.
  10. Do not overcook shrimp.
  11. Adjust salt and pepper if it needs extra seasoning.
  12. Garnish with fresh parsley.
  13. Serve saucy shrimp with pasta or over a bed of rice.
