2-minute peanut butter healthy mug cake

This quick peanut butter mug cake uses coconut flour, peanut butter, and maple syrup to create a small, moist cake cooked in the microwave. The texture balances the dense absorbency of coconut flour with smooth peanut butter, and chocolate chips on top add melted pockets of richness. Made in just minutes, it is suitable for one or more servings with easy adjustments.

Description

The 2-minute peanut butter mug cake combines coconut flour, known for its high absorbency, with creamy peanut butter and a sweetener like maple syrup or honey. Almond milk or other milk variants add moisture to form a smooth batter. Pressing chocolate chips into the top before microwaving briefly melts them, contributing a soft chocolate layer.

The microwave cooking time is brief and should be monitored to avoid dryness; one minute generally yields a moist cake with a tender crumb. Additional short intervals may be added if the cake is undercooked. The quick method allows for individual-sized portions prepared fresh on demand.

This mug cake can be eaten plain or topped with ice cream or nice cream for added indulgence. Variations include replacing coconut flour with almond flour or cocoa powder for different flavors and textures, but coconut flour requires precise measurement to avoid dryness.

Ingredients

Servings
  • 1 tablespoon coconut flour
  • 2 tablespoons peanut butter
  • 1 tablespoon maple syrup or date syrup, or honey
  • 2 tablespoons almond milk or other non-dairy milk – or ordinary milk
  • a few dark chocolate chips or a 10 gram piece of 70% dark chocolate

Instructions

  1. Put all the ingredients apart from the chocolate chips in a small mug and mix really well with a spoon.
  2. Press the chocolate into the top of the mixture. Microwave for 1 minute.
  3. Enjoy immediately either by itself or with a small scoop of ice cream/nice cream on top!

Notes

  • Use exactly one level tablespoon of coconut flour to avoid a dry texture.
  • Almond flour can substitute for coconut flour; brown sugar recommended with plain flour.
  • To make a chocolate version, swap coconut flour with cacao or cocoa powder.
  • Microwave timing depends on wattage; start with 1 minute and check, adding 20 seconds if needed.
  • For multiple servings, prepare separately and mix ingredients fresh before microwaving due to flour absorbency.
