20 min Tomato Basil Soup Recipe
Description
The recipe begins by sautéing sliced onion and garlic in olive oil until softened and fragrant. Fresh diced tomatoes and vegetable broth are added, creating a fresh base. Whole basil leaves, a bay leaf, and thyme or Italian seasoning give the soup herbal depth. The mixture cooks over medium heat to develop flavor and meld ingredients.
After cooking, the bay leaf is removed, and the soup is blended to a smooth or slightly textured consistency according to preference. Seasonings of salt and black pepper are adjusted after blending. The final result is a medium-bodied tomato soup with fresh herb notes and a mild tang from the tomatoes.
Served hot, garnishing with fresh parsley adds a touch of brightness and color. This soup fits as a light meal or appetizer and can be paired with bread or sandwiches. Its simple ingredients and short cooking time make it accessible while preserving fresh tomato flavor.
