20-Minute Ground Beef and Vegetable Stir Fry

This 20-Minute Beef Stir Fry is the best tasty, quick meal! It's made with juicy ground beef, hearty vegetables and the most delicious stir-fry sauce. Serve this super quick dinner with your favorite rice noodles or enjoy as is for a great lower carb option!

Ingredients

Servings
  • 1 Tbsp sesame oil - or other oil
  • 1 Tbsp ginger or minced ginger, paste
  • 10 oz. broccoli florets
  • 3 carrot chopped into 1/4-inch pieces, small, 120g
  • 1 yellow onion chopped, small, 170g
  • 1 lb. ground beef 96% lean, 4% fat
  • 4-6 oz. rice noodles optional for serving

For the Sauce:

  • 3 garlic minced - I used frozen, cloves
  • 1/2 cup water hot
  • 1/3 cup soy sauce low sodium, 80g
  • 2 Tbsp brown sugar 36g
  • 2 Tbsp cornstarch 16g
  • 1 Tbsp sesame oil 15g

Instructions

  1. In a small bowl, whisk together all the sauce ingredients and set aside.
  2. Cook rice noodles according to package directions if making.
  3. Meanwhile, add the oil to a wok or skillet and set to medium-high heat. Add the broccoli, carrots and onion and saute for 4-5 minutes or until they start to char and soften. Stir frequently to prevent sticking. Remove from wok and set aside.
  4. Add the beef to the wok and season with salt and pepper to taste. Cook over medium heat for 4-5 minutes, crumbling as you go, until no longer pink.
  5. Pour the sauce over the beef and bring the sauce to a light simmer.
  6. Add the vegetables back to the wok. Toss everything to combine and continue to simmer for a few more minutes so the sauce can thicken some. Serve with rice noodles or enjoy as is. Divide into 4 bowls and enjoy!

Notes

  • Time saving tip: Use a frozen stir fry blend! Save time and grab a frozen stir fry blend in the freezer section to make this recipe even quicker!
