20-Minute Kimchi Tempeh Tacos

These tacos combine cooked tempeh with bright, chopped kimchi, creamy avocado, and fresh cilantro, all wrapped in small tortillas. A tangy sauce made from sour cream, mayonnaise, sriracha, and lime juice complements the filling. The option to sauté the kimchi adds a touch of caramelization, bringing depth to the spicy, fermented flavor. This recipe offers a balanced texture with crispy tempeh and smooth avocado that works well for a quick, satisfying meal.

Description

The 20-Minute Kimchi Tempeh Tacos feature a seasoned tempeh filling paired with chopped kimchi that can be served raw or lightly sautéed to bring out a caramelized edge. Slices of ripe avocado add creaminess and freshness, while the cilantro contributes a bright herbal note. The sauce combines sour cream and mayonnaise with sriracha and lime juice, providing a cooling heat and slight tang. These elements come together in small tortillas or taco shells for easy assembly and serving.

The preparation focuses on assembling layers of flavor and textures, from the chewy, nutty tempeh to the spicy, fermented kimchi and the rich sauce. The optional step of sautéing the kimchi slightly softens its crunch and intensifies its taste. This dish is suitable for a quick lunch or light dinner, delivering satisfying flavors without complex steps.

Versatile and flavorful, the tacos work well as a standalone dish or served alongside a simple salad or rice. The sauce can be adjusted in spiciness by varying sriracha to taste.
