20-Minute Lazy Enchiladas

Report
This 20-Minute Lazy Enchiladas dish layers frozen taquitos on a spread of refried beans in a casserole dish, topped with red enchilada sauce, then baked. Once baked, shredded cheddar cheese is added and melted for a gooey finish. The result is a quick casserole-style enchilada meal with cheesy, saucy, and hearty textures made using convenient ingredients.

Description

20-Minute Lazy Enchiladas simplify traditional enchilada preparation by using frozen taquitos and canned refried beans as the base. The casserole is assembled by evenly spreading refried beans, layering taquitos, covering them completely with red enchilada sauce, then baking until heated through. Adding shredded cheddar cheese and returning the dish to the oven melts the cheese, adding richness and contrast to the savory sauce and crisped edges of the taquitos.

This dish results in a hearty, layered casserole that combines creamy beans, tender filling from the taquitos, and tangy enchilada sauce. The melted cheddar cheese creates a thick, melty topping that complements the saucy base.

Preparation involves minimal active cooking time and uses frozen and canned ingredients, making it well suited for a quick meal with familiar enchilada flavors.
