20 Minute Steak Fajitas

This 20 Minute Steak Fajitas recipe features thinly sliced flank steak cooked quickly with colorful bell peppers, mushrooms, red onion, and a homemade fajita seasoning blend. The vegetables are sautéed until tender-crisp, then combined with seasoned steak for a balanced texture and savory flavor. The lime juice and Worcestershire sauce add bright and umami notes, making it a versatile filling for warm flour tortillas.

Description

20 Minute Steak Fajitas use flank steak thinly sliced against the grain to ensure tenderness, paired with a quick sauté of multicolored bell peppers, red onion, and mushrooms. A homemade seasoning mix of cumin, chili powder, onion powder, salt, and red pepper flakes enhances the meat and vegetables with a smoky and mildly spicy flavor. Cooking the vegetables first keeps them crisp, while the steak cooks quickly over high heat to develop seared edges and juicy interior. A splash of lime juice and Worcestershire sauce add brightness and depth.

Served in warm flour tortillas, these fajitas provide a balanced meal with protein and vegetables. The combination of tender steak slices and charred vegetables creates a satisfying texture contrast. This style of fajitas is great when you want a flavorful yet efficiently cooked dish for a casual meal.

Separately cooking the vegetables and steak helps maintain distinct textures, and seasoning in two stages layers flavor. Using fresh lime juice at the end adds a fresh acidity to balance the richness of the steak and the savoriness of the spices.

Ingredients

Servings

Fajita Seasoning Mix

  • 2 teaspoons cumin ground
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes crushed

Steak Fajitas

  • 1 1/2 pounds flank steak thinly sliced against the grain
  • 2 tablespoons olive oil
  • 3 medium bell peppers sliced, multi-color
  • 1 medium red onion sliced
  • 8 ounces mushroom sliced
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup lime juice about 2 limes
  • 10 (6-inch) flour tortillas for serving

Instructions

  1. In a small bowl, stir together 2 teaspoons ground cumin, 2 teaspoons chili powder, 1 teaspoon onion powder, 1 teaspoon salt, and 1 teaspoon crushed red pepper flakes. Set aside.
  2. Thinly slice 1 1/2 pounds flank steak against the grain. Slice 3 medium multi-color bell peppers, 1 medium red onion, and 8 ounces of mushrooms. Mince 2 cloves of garlic.
  3. Heat a large skillet over high heat. Add in 2 tablespoons olive oil, let heat for a minute, and then add in your sliced bell peppers, onion, and mushrooms. Cook until the vegetables are tender-crisp, about 7 minutes, stirring frequently.
  4. During the last two minutes of cooking add in half of your seasoning mix and 2 cloves minced garlic Cook an additional 1 to 2 minutes. Remove the vegetables from the pan and set aside on a plate or in a bowl.
  5. Return the skillet to high heat. Add the thinly sliced flank steak to the hot skillet. Sprinkle the remaining fajita seasoning and 1 tablespoon Worcestershire sauce over the steak. Cook, tossing constantly, for 2 to 3 minutes for medium-rare doneness (cook for an additional 3 to 4 minutes if you prefer well-done steak).
  6. When the steak is cooked, add the cooked vegetables back to the skillet. Drizzle with 1/4 cup lime juice and toss everything together to combine.
  7. Serve the steak fajitas on warm flour tortillas. Add optional toppings like sour cream, cilantro, guacamole, or salsa.
