3-Ingredient Almond Butter Cookies

3-Ingredient Almond Butter Cookies are simple cookies made from almond butter, raw sugar, and an egg. Their straightforward preparation yields soft cookies once cooled, featuring a nutty almond flavor and a tender texture. The quick mixing and baking steps make these cookies an accessible choice for minimal-ingredient baking.

Description

The cookie dough comes together by combining almond butter, raw sugar (or monk fruit sugar as a substitute), and a lightly beaten egg. The batter is scooped and spaced onto lined baking sheets and then flattened with a fork to create a crosshatch pattern. Baking at 350°F, with racks switched halfway, produces cookies with golden edges and a soft center once cooled.

These cookies deliver a chewy and tender texture with a subtle sweetness and natural almond taste. They require no flour, making them a simple option for nut butter lovers.

They need to cool completely before removing to avoid breakage, as they are soft out of the oven but firm up once cooled.

Ingredients

Servings
  • 1 cup almond butter Maple or Vanilla, brand Justins
  • 6 tbsp raw sugar (or Monk fruit brown sugar works great to reduce the sugar)
  • 1 egg lightly beaten, large

Instructions

  1. Preheat the oven to 350°F and place the racks in the upper and lower third of the oven. Spray two nonstick baking sheets lightly with cooking spray or line with silicone mats.
  2. In a medium bowl, with a spatula mix the almond butter, sugar and egg until well combined and smooth. Spoon 1 level tablespoon of the batter about 1 inch apart onto the prepared baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies.
  3. Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Let cool completely, (they will be soft until they cool) before removing from the cookie sheet and transferring to a cookie rack.

Notes

  • If substituting sugar with monk fruit sweetener, the cookies lower in Weight Watchers points to 2 points per serving.
