3-ingredient Almond Flour Cookies (GF) (DF)
Description
The recipe combines sifted icing sugar with almond flour and eggs to form a soft dough that, despite initially appearing dry, binds upon mixing. Shaped into balls and arranged spaced apart on a baking sheet, the cookies bake at 350°F until golden. Using almond flour instead of meal yields a finer texture. Eggs serve as the sole binder, with an optional second egg if an egg wash topping is desired.
The cookies have a subtle sweetness and a tender bite, complemented by optional almonds for extra crunch. Variations include adding zest, chopped nuts, chocolate chips, or cocoa nibs for flavor contrasts. The dough may also be adapted to incorporate peanut butter or vanilla extract, expanding the flavor profile while keeping preparation minimal.
This is a minimal-ingredient cookie ideal for simple home baking or for those seeking gluten and dairy-free options without complex components.
Ingredients
- 1 Cup almond flour If you use almond meal instead, the texture will be less fine and a bit coarser
- ⅓ Cup icing sugar Please sift or there will be sweet lumps in your dough. Do not replace 1:1 with caster sugar or it'll taste too sweet.
- 1 egg Make it 2 eggs if you plan to egg wash the cookies.
- almonds Optional topping that will give the cookies more texture, sliced or whole
Instructions
- Pre-heat the oven to 350F/ 177C/ 157C fan.
- Mix the ingredients well till you get a soft moist dough. (It will be stiff and look like there's not enough liquid to bind everything together at first but keep going and you'll get there.)
- Scoop the dough into balls and place them about 1 inch apart on a baking sheet. (They don't spread much.)
- Optional: top with a sliced/ whole almond then brush with beaten egg.
- Bake for about 15 minutes or till nice and golden.
Notes
- Sifting the icing sugar is important to avoid lumps in the dough and ensure even sweetness.
- Almond meal can be used but will produce a coarser, less refined texture compared to almond flour.
- Adding orange zest or vanilla extract can enhance the flavor without impacting the simplicity.
- Chopped almonds or dark chocolate chips can be folded into the dough for texture and taste variety.
- The recipe can be modified to almond flour peanut butter cookies by substituting the egg with peanut butter and icing sugar with maple syrup.
