Ingredients
- 2 lbs. chicken breast boneless
- 3 bell pepper I used a red, yellow and green, medium, 450g
- 1 red onion large, 300g
- 1 Tbsp olive oil 15g
- 1 lime juiced
- 2 (1-oz.) taco seasoning packs
- 1/4 cup cilantro freshly chopped
- tortilla for serving, Fajita size
- avocado optional for serving; include lime wedges

Instructions
- Preheat the oven to 400 degrees F.
- Dry the chicken, peppers and onions well with a paper towel then cut them all into thin slices. Add them all to a rimmed baking sheet.
- Drizzle the olive oil and lime juice over top then toss to combine. Then sprinkle the taco seasoning over top and toss again. Spread the chicken and vegetables out over the baking sheet evenly.
- Bake for 18-20 minutes, or until chicken is cooked through. Then broil on high for 3-4 minutes to get everything a little charred.
- Sprinkle with the fresh cilantro then serve with warm tortillas and whatever else sounds good and enjoy!
