Ingredients

Servings
  • 1 .5-ounce can cream of chicken soup
  • 1 ounce block cream cheese, softened
  • 2 .5-ounce Italian dressing powder mix
  • 2 pounds boneless skinless chicken about 3-4 breasts

Serving Suggestion

  • parsley optional garnish
  • your favorite noodles, mashed potatoes, or rice

Instructions

  1. Make the sauce. In the basin of your crockpot, combine the cream of chicken soup, cream cheese, and Italian dressing powder until smooth. (It's okay if the cream cheese doesn’t fully incorporate, it will melt when cooked.)
  2. Add the chicken. Add the chicken and spoon some of the sauce over the top of the breasts so that they are covered.
  3. Cook. Cover your crockpot and cook on low for 6 hours or high for 3 hours.
  4. Shred the chicken. Once cooked, use 2 forks or shredding gloves to shred your chicken in the crockpot and mix well to combine it with the sauce.
  5. Garnish and serve. Garnish with chopped parsley if you’d like and serve warm. This recipe is great over rice, mashed potatoes or cooked pasta.

Notes

  • FAQ Questions:What will I need to complete this recipe?
  • You will need the following ingredients:
  • You will need the following supplies:
  •
  • Storage Instructions:
  • If you have leftover crockpot creamy Italian chicken, turn off your crockpot and allow it to cool to room temperature (no longer than 2 hours). Once cooled, transfer the chicken and sauce into an airtight container or resealable bag. Store for 3-4 days or transfer to the freezer for longer storage.
  •
  • How can I reheat this dish?
  • You can reheat your creamy Italian chicken on the stovetop or in the microwave.
  • Stovetop: Add your chicken to a medium skillet over medium heat. Cook, stirring occasionally for 10-12 minutes. Garnish with additional parsley if desired.
  • Microwave: Add individual servings to a microwave-safe plate and heat at 50% power for 4 minutes or until warmed throughout.
  •
  • What does this taste like?
  • Creamy Italian chicken is rich, savory, and full of flavor. Tender, juicy chicken is coated in a luscious, creamy sauce that's infused with Italian herbs and seasonings from the Italian dressing mix. The creamy sauce is bold and velvety creating a dish that’s hearty and comforting.
  •
  • What is another variation I can make?
  • You can make this in a 9x13 casserole dish. Add all of your ingredients to the dish and cover with foil. Cook at 375°F for 30 minutes or until the chicken reaches 165°F.
  •
  • Can I make this ahead of time and freeze it?
  • This recipe freezes well and is a huge time saver for busy weeknights. Prepare the chicken as directed and allow it to cool to room temperature. Transfer to an airtight container or labeled and dated resealable freezer bag and store in the freezer for up to 3 months. Thaw completely before reheating.
  •
  • Can I use a Crockpot Liner?
  • You can use a crockpot liner for this dish but you will have to pull the chicken out of the pot to shred it. If you shred the chicken in the pot, you also risk shredding the liner and getting bits of it into your food. Nobody wants that.
  •
  • Can I use frozen chicken?
  • It's best to use thawed chicken because thawing expels excess liquid ensuring that your meal is not soupy. If you decide to use frozen breasts, increase your cooking time by 1 hour for high and 2 hours for low. If you find that your sauce is too thin at the end, you can remove ½ cup of the sauce and mix it with 1-2 Tablespoons of cornstarch and add that mixture back to the crockpot to thicken it.
  •
  • What else can I add for additional flavors?
  • This meal is simple and elegant while still being packed with flavor. If you have a bit more time and want to add a few more ingredients to this recipe, here are some suggestions to get you started.
  •
  • boneless skinless chicken breasts - Thighs also work great but you could also use tenderloins or turkey.
  • Italian dressing mix powder - Make sure you’re using the powder and not a bottle of premade dressing. If you use bottled dressing, you’ll get an oily soup rather than a rich and creamy chicken dish, or feel free to make your own homemade dry seasoning mix.
  • cream cheese - Make sure to leave your cream cheese out to come to room temperature. You want it nice soft and creamy to incorporate well with the other ingredients.
  • cream of chicken soup - Store-bought is a huge time saver but if you prefer to use a homemade version, it will also work.
  • parsley - This is optional but it adds some freshness and color to the dish.
  • crockpot - I used a 6-quart crockpot but an 8-quart would also work.
  • spoon - You’ll need a large spoon to slather your chicken with the sauce to keep it moist while it cooks.
  • forks or shredding gloves - This is how you’ll shred your chicken.
  • You can add ½ cup sour cream for a little tang.
  • You can add 1 teaspoon of red pepper flakes for some spicy heat.
  • You can add 1 Tablespoon minced roasted garlic for a deep roasted garlic flavor that will make you do a happy dance.
