4-Ingredient Healthy Samoa Cookies (Paleo)

These Paleo-friendly Samoa Cookies mix mashed ripe bananas, shredded unsweetened coconut, and optional maple syrup, baked into chewy discs and dipped in melted dark chocolate. Their natural sweetness and simple ingredients deliver a moist, flavorful treat with a hint of tropical coconut and chocolate richness.

Description

The recipe for 4-Ingredient Healthy Samoa Cookies begins by mashing ripe bananas to create a sticky base to which shredded coconut and optional pure maple syrup are added. This mixture forms a thick, manageable dough. The dough is shaped into small discs and baked until golden brown, developing a firm texture with chewy coconut edges. After baking, the cookies are dipped into melted dark chocolate combined with coconut oil, which hardens to form a glossy coating. Additional chocolate can then be drizzled on top for decoration.

The cookies achieve a balance of moist sweetness from the bananas and the toasted, fibrous texture of baked coconut, complemented by the sharpness of dark chocolate. The simple ingredient list supports a minimalistic approach without compromising on flavor or mouthfeel. These cookies can be made with or without the optional maple syrup depending on desired sweetness.

Ingredients

Servings
  • 2 banana mashed, large, ripe
  • 1 to 2 Tbsp pure maple syrup optional
  • 2 cups coconut unsweetened, shredded
  • 1 dark chocolate 3-oz bar chopped, or 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Mash the bananas in a mixing bowl until most of the lumps are out. Stir in the pure maple syrup and shredded coconut until very well combined. This mixture will be thick and sticky, but should come together easily.
  3. Form small disc shapes out of the mixture and place on the baking sheet. (Note: you can poke holes in the center of the cookies to make them look like original Girl Scout cookies). Bake for 20 to 25 minutes, until the cookies are golden-brown around the edges and feel firm when poked.
  4. Add the chopped chocolate bar (or chocolate chips) and coconut oil to a bowl and heat in the microwave for 20-second intervals, stirring very well in between intervals, until the chocolate has melted, about 1 minute total.
  5. Dip each cookie in chocolate, and place it chocolate side up on the baking sheet until they dry. Once the chocolate has hardened, use the rest of the chocolate to drizzle on top (you may need to re-melt the chocolate in the microwave).
