4-Ingredient Instant Pot Chicken Chile Verde combines bone-in or boneless chicken thighs or breasts with ground cumin, garlic powder, and a jar of salsa verde, cooked under high pressure until the meat is tender enough to shred easily. The pressure cooking method speeds the infusion of the salsa verde's tangy, green chili and tomatillo flavors into the chicken, resulting in juicy, flavorful shredded meat.

After cooking, the chicken is shredded within the pot and seasoned to taste with salt and pepper. Its moist texture and bright flavor make it versatile as a filling for tortillas, quesadillas, burritos, tacos, or even served over rice or tossed in a salad.

This recipe can be adapted for a regular pressure cooker with similar timing. Leftover chicken chile verde keeps for up to three days refrigerated or can be frozen for about a month, making it useful for meal prep and quick meals throughout the week.

Ingredients

  • 2 lbs. chicken thighs or chicken breasts
  • 1/2 teaspoon cumin ground
  • 1/4 teaspoon garlic powder
  • 16 ounces salsa verde
  • salt to taste
  • black pepper to taste

Instructions

  1. Place the chicken in the Instant Pot or pressure cooker. Add the cumin, garlic powder, and salsa verde.
  2. Set cooker to high pressure for 25 minutes or on the Instant Pot press the poultry button.
  3. When the chicken is done cooking, quick release the pressure and shred the chicken in the pot with two forks. Season with salt and black pepper, to taste. Serve with tortillas, rice, use in burritos, quesadillas, tacos, salads, etc.
  4. Note-if you don't have an Instant Pot you can use a regular pressure cooker. The shredded chicken will keep in the fridge in an airtight container for up to 3 days. The shredded chicken can be frozen for up to 1 month.
