A super light, fresh, cooling fresh fruit sorbet, perfect for summer and Vegan friendly!

Ingredients
- 6 fresh peaches
- 1/2 cup of sugar
- juice from half a lemon
- pinch kosher salt
Instructions
- Peel Peaches: Peel and pit the peaches. See notes for how to peel peaches based on ripeness. Add peaches to a freezer safe container and freeze until they are firm, usually about 2 -4 hrs.
- Blend: In a food processor, add frozen peaches, sugar, salt, and lemon juice and blend until creamy.
- Freeze: Transfer to a loaf pan (or other freezer safe container) and freeze (4 hrs to three days).
- Scoop and enjoy!

- Store the sorbet in the freezer for about a month.

- Peeling Peaches
- If the peaches are firm, you should be able to use a vegetable peeler to peel them. If they are soft and ripe, then use a pairing knife to cut a cross at the bottom of the peach and then drop them in boiling water for 20-30 seconds. Transfer the peaches to a bowl with ice water to cool and then once cool, the skin should peel away easily. Halve and then remove the pit.
- Sugar: This is a lower-sugar sorbet recipe, you can increase the sugar up to 1 cup.
- Customize: Use another fruit or add fruit to peaches!
