Chicken Taco Soup

  • 1 tablespoon olive oil
  • 15 ounce black beans rinsed and drained, canned
  • 15 ounce red kidney beans rinsed and drained, can
  • 15 ounce corn rinsed and drained, canned
  • 3 tablespoons taco seasoning
  • 1 cup mild salsa
  • 15 ounce diced tomato petite, canned
  • 2 to 3 cups chicken shredded rotisserie
  • 2 cups chicken broth low-sodium

Instructions

  1. In a large Dutch oven or soup pot, heat the oil over medium-high heat. Add the beans, corn, and taco seasoning. Brown until the veggies are softened. 
  2. Add the salsa, tomatoes, chicken, and chicken broth. Bring to a boil before reducing the heat and simmering for 20 minutes. 
  3. Remove from heat and serve in bowls topped with sour cream and avocado
