4th of July Cookies

Soft, chewy red, white and blue cookies made with cake mix are so easy and delicious!

Ingredients
- 1 box vanilla or white cake mix
- 2 eggs room temperature
- ⅓ cup vegetable oil
- 1 teaspoon vanilla
- 12 ounces red melting chocolate
- 12 ounces white melting chocolate
- 12 ounces blue melting chocolate
- red white, and blue sprinkles of choice
Instructions
- In a large bowl, add the cake mix, eggs, vegetable oil, and vanilla. Using a hand mixer mix until well incorporated.
- Place the dough in the refrigerator and chill for 20 minutes.
- Meanwhile, preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
- When the dough is done chilling, scoop the dough into 1- to 1 ½-inch balls and place them on the prepared baking sheet.
- Place baking sheet in preheated oven at 350 degrees Fahrenheit. Bake for 8-10 minutes in the preheated oven. Do not overbake.
- Let the cookies cool completely before the next step so they don't fall apart when you dip them.
- Melt each of the red, white, and blue melting chocolates in separate bowls in the microwave in 30 second intervals until the consistency is smooth and creamy.
- Line a baking sheet with parchment paper.
- Dip half of a cooled cookie into the melted chocolate. Set down on parchment lined baking sheet. Immediately add the sprinkles of your choice. *Handle the cookies with care as they tend to be delicate*.
- Let the melting chocolate set naturally or pop the cookies into the refrigerator to set faster.

- FRIDGE: To extend the life of your cookies, store them in the fridge for up to 5 days. If you know your kitchen will be warm, store cookies in the fridge so that the chocolate does not get tacky or melt.
- FREEZER: You can freeze undecorated fourth of July cookies. Place them in an airtight container with parchment paper between layers, and freeze for up to 2 months. Thaw them and decorate as normal when you’re ready to serve!
- Don’t over bake your cookies! Once they are set around the edges and slightly golden brown, they’re done. Cake mix cookies will set a little more firmly once they cool.
- Be gentle when dipping each cookie in the chocolate as they are more fragile and could break.
- Add sprinkles immediately after dipping each cookie so that they will stick!
