4th of July Icebox cake

Report
The 4th of July Icebox Cake is a no-bake layered dessert combining cream cheese, whipped cream, graham crackers, and fresh berries. Alternating layers of creamy, vanilla-scented filling with crunchy crackers and bright blueberries and strawberries create a soft texture as the cake chills. The berry topping adds a festive and fresh finish, making this dessert appealing for summer gatherings.

Description

This dessert assembles layers of graham crackers, a smooth cream cheese and whipped cream mixture flavored with vanilla, and fresh fruit including blueberries and thinly sliced strawberries. The layers are repeated three times to build a tall cake, and then refrigerated for 2 to 4 hours. During chilling, the moisture from the cream softens the graham crackers into a cake-like texture while keeping some structure. The fresh berries add a slight tartness and bright color that complement the sweet cream layers.

The cake is ideally served chilled, making it well suited for warm weather holidays or casual celebrations. Its no-bake assembly saves oven time and clean-up.

Ingredients

Servings
  • 1 8- ounce cream cheese package
  • 3 ½ cups heavy whipping cream
  • ¾ cups sugar
  • 1 tablespoon vanilla
  • 1 14- ounce graham crackers
  • 2 cups Blueberry divided
  • 3 cups strawberries thinly sliced divided

Instructions

  1. In a large bowl cream the cream cheese and sugar together until smooth.
  2. Add the heavy whipping cream, vanilla, and beat until mixture begins to thicken and forms soft peaks. Set aside.
  3. On the bottom of a 9×13 pan, place a single layer of graham crackers.
  4. Next, place one-third of the cream cheese mixture over the graham crackers spreading gently.
  5. Top this layer with 1/2 cup blueberries, and one cup thin sliced strawberries. Repeat this layering process twice more.
  6. For the top berry layer place the strawberries and blueberries sprinkled throughout (or however you want to decorate the top)
  7. Refrigerate 2 to 4 hours before serving so that the layers can “settle” into each other.
