5 Minute Carrot Cake in a Mug is just that - from scratch Carrot Cake, made and cooked in a Mug, that only takes 5 minutes (probably less) from start to finish! There's not a box mix in sight!

  • 4 tbsp carrots
  • 4 tbsp flour
  • 2 tbsp butter
  • 3 tbsp milk
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ tsp baking powder

How to Make Carrot Mug Cake

  1. Peel and grate the carrots.
  2. Melt the butter in a mug in the microwave.
  3. Pour in the sugar, milk and then the flour into the mug.
  4. Add the cinnamon and baking powder and stir.
  5. Finally add in the grated carrots and mix well. Microwave for about 1 minute (the exact time will depend on your microwave wattage.)
  6. Insert a thin metal or wooden skewer into the center of the cake. If the skewer has batter on it, then continue to microwave the cake for 10 seconds at a time until the skewer comes out dry (no batter but a little greasy.)

Spiced Cream Cheese Frosting for the Carrot Cake Mug Cake

  1. Combine powder sugar, cream, whipped cream cheese and cinnamon in a bowl and blend well.
  2. Remove the carrot cake from the microwave once it has finished baking and add the frosting to the top.

Notes

  • The exact cook time in the microwave will depend on the wattage. For reference, it took 1minute for this Carrot Cake Mug Cake to cook in a 1250 watt microwave.
  • I used a 8oz / 250ml size of mug for this recipe.
