5 Minute Crunchy Asian Lime-Peanut Slaw

This Asian-inspired slaw features crisp English cucumber, vibrant bell peppers, and fresh carrots, all coated in a zesty lime and ginger peanut dressing. The peanut butter provides a creamy texture that complements the crunch of fresh vegetables, while chopped peanuts add an extra layer of nutty flavor. Ideal for quick preparation, this slaw offers a bright, tangy side dish or a standalone light meal with refreshing herbal notes from cilantro and scallions.

Description

The 5 Minute Crunchy Asian Lime-Peanut Slaw combines thinly sliced cucumbers, bell peppers, and carrots into a refreshing salad tossed in a tangy dressing made from lime juice, peanut butter, freshly grated ginger, and rice wine vinegar. This mix creates a balance of creamy, tart, and slightly spicy flavors. The addition of chopped peanuts both in the dressing and as a garnish gives the dish a pleasant crunch and richer peanut essence.

Vegetables are spiralized or thinly sliced to preserve their crisp texture, making the salad light and crunchy. The chili flakes add a subtle warmth without overpowering the bright acidity from the lime juice. Fresh cilantro and scallions contribute herbaceous freshness and mild pungency to round out the flavor profile.

Easy to assemble yet layered with textural contrasts and lively flavors, this slaw works well as a quick side or as a crisp, flavorful addition to a meal. Its quick preparation time suits last-minute meals or to accompany grilled dishes, providing a cool, vibrant complement.

Ingredients

Servings
  • 1 1/2 cups English cucumber
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 carrot
  • 1/2 cup cilantro leaves
  • 1 scallion thinly sliced on a bias, bunch
  • 3 lime
  • 3 tablespoons peanut butter
  • 2 teaspoons ginger freshly grated
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon canola oil
  • 1 chili flakes pinch
  • 1/4 cup roasted , honey roasted peanuts (roughly chopped, plus more to garnish)
  • salt Kosher salt and freshly ground
  • black pepper Kosher salt and freshly ground

Instructions

  1. In a large bowl bowl, whisk together the juice of 3 limes, peanut butter, grated ginger, rice wine vinegar, 1 tablespoon of sesame oil and canola oil.
  2. Season to taste with chili flakes, salt and pepper.
  3. Peel the carrots and cucumbers.
  4. Using a spiralizer make noodles out of the cucumber, carrots and bell peppers.
  5. The bell peppers won't come out as noodles per se but they will be sliced thinly and that works.
  6. Add the prepared cucumbers, red bell peppers, carrots, cilantro, scallions and peanuts to the large bowl with the dressing.
  7. Toss everything well.
  8. Garnish with peanuts (use honey roasted if you can, trust me!).

Notes

  • Use fresh lime juice for the best bright citrus flavor.
  • Try honey roasted peanuts for garnish if available to add a subtle sweetness and crunch.
  • Peeling the carrots and cucumbers before spiralizing helps improve texture and appearance.
  • This salad is best served immediately to retain the crispness of the vegetables.
