Description
This dressing mixes tart raspberry vinegar with the richness of vegetable oil and the sweetness of honey. Dijon mustard acts as an emulsifier, helping the oil and vinegar combine, while minced shallots contribute a mild onion flavor. Salt and fresh ground pepper season the dressing for balance.

Ingredients
- 3 tablespoons raspberry vinegar
- 6 tablespoons vegetable oil
- 3 tablespoons honey
- 1 teaspoon Dijon mustard
- 2 tablespoons shallots from one shallot, finely minced
- ¼ teaspoon salt
- ⅛ teaspoon black pepper freshly ground
Instructions
- Combine raspberry vinegar, vegetable oil, honey, Dijon mustard, shallots, salt and pepper in a small sealable container and shake vigorously to blend (be sure honey doesn't stick to bottom). Alternatively, combine vinegar, honey, mustard, shallots, salt and pepper in a medium bowl. Whisking constantly, slowly drizzle in oil until emulsified.
Notes
- Store the vinaigrette in an airtight container in the refrigerator for up to 5 days.
- Shake the dressing vigorously before each use to recombine the ingredients.
