5-Minute Sautéed Spinach with Garlic and Lemon

Ingredients

  • 1 tablespoon extra-virgin olive oil or butter
  • 1 clove garlic minced
  • 2 tablespoons lemon juice (about 1/2 of a lemon)
  • 5 oz. baby spinach (or other baby greens) (about 3 cups packed)
  • kosher salt to taste
  • black pepper to taste

Instructions

  1. Heat the oil (1 tablespoon) over medium-high heat in a large skillet (preferably non-stick).
  2. Add the minced clove of garlic; sauté for one minute or until fragrant.
  3. Add the lemon juice and the spinach. Sauté for 3-4 minutes, or until greens are wilted (but not browned).
  4. Remove from heat and season with salt and pepper to taste. Serve immediately.
