Cheesy Sautéed Garlic Spinach or fried spinach with feta, goat, bleu or cheddar, is so easy! This sauteed spinach with cheese recipe can include bacon too!

Ingredients
- 1 ½ pounds spinach
- ¼ cup olive or another vegetable oil
- ¼-1/2 cup feta, bleu or goat cheese, cubed or crumbled more or less to taste
- 1-3 tablespoons garlic, sliced or minced more or less to taste
Options
- 1 onion, diced or sliced
- ½ pound bacon, cooked and crumbled
- reserved bacon grease
- ½ - 1 teaspoon crushed red pepper flakes

Instructions
- Remove the coarse stems, wash and drain your spinach.
WITH Bacon
- In a large skillet cook your bacon until crispy. Set aside on a paper towel.
- Remove a lot of the remaining bacon grease in your skillet. I usually tip the pan to the side and carefully absorb some of the grease into a ball of paper towel.
- Heat your skillet with bacon grease over medium heat.
WITHOUT Bacon
- Place your oil in a skillet or wok over medium to medium-high heat until it shimmers or a drop of water flicks and dances.
The Recipe
- Add the onion, stir to cook until the onions are tender, about 5 minutes. If you are using regular spinach, add it right now with your onions.
- Place bacon pieces back into your skillet.
- Add crushed red pepper flakes, if using, garlic, salt and pepper and stir. Reduce heat if the garlic starts to turn brown. Stir constantly.
- Add baby spinach, if using, and cook until it starts to wilt; less than a minute. Exact cooking time will be determined by the heat and type of spinach you're using.
- Remove spinach from skillet or wok and place on serving plate.
- Sprinkle immediately with cheese of your choice.
- Serve immediately. Enjoy!
