5-Minute Tomato Gazpacho Recipe
Description
The recipe blends ripe Roma tomatoes with seedless cucumber, red bell pepper, red onion, garlic, and seasoning to create a cold soup. Red wine vinegar and olive oil add acidity and richness, while salt and pepper balance the flavors. The ingredients can be purely blended for a smooth texture or left slightly chunky for more bite. Optional additions like hot sauce enhance its spiciness, and toppings such as homemade croutons or diced vegetables add crunch.
Gazpacho is served cold, making it a refreshing start or accompaniment to meals during warm days. It pairs well with crunchy garnishes that add textural contrast.
The soup can be stored airtight in the refrigerator for 2 to 3 days. It is best to keep the toppings separate until serving to maintain crispness.
Ingredients
- 2 lb Roma tomato about 4 tomatoes, 900 g
- ½ large cucumber seedless
- 1 red bell pepper
- ½ cup onion red, chopped
- 2 cloves garlic
- 2 Tbsp extra virgin olive oil 30 mL
- 2 Tbsp red wine vinegar 30 mL
- ¼ tsp salt
- ¼ tsp black pepper
- Optional: hot sauce, croutons, diced veggies
Instructions
- Prep: Collect all your ingredients. Seed and core the bell pepper. Roughly chop the onion.
- Blend: Add all ingredients to a blender and blitz until smooth (or leave it a bit chunky if you prefer that). Taste and add more salt, pepper and hot sauce (optional) as needed.
- Serve: Serve cold, topped with your favorite toppings. Homemade croutons and crunchy veggies (like bell pepper and onion) are my favorites.
