7UP Cake

The 7UP Cake uses a boxed yellow cake mix combined with eggs, vegetable oil, lemon pudding mix, and 7UP soda to create a moist, light cake with a hint of citrus. Topped with a zesty glaze made from powdered sugar, lemon and lime juice, and 7UP, this cake offers tender crumb and refreshing flavor, suitable for gatherings or dessert occasions.

Description

The 7UP Cake blends a convenient yellow cake mix with instant lemon pudding and 7UP soda, which contributes carbonation and flavor to lighten the batter. The resulting cake has a moist and tender crumb with subtle citrus undertones from the pudding and soda, creating a brightness that lifts the traditional yellow cake base. Baking in a greased Bundt pan develops a golden crust and even rise.

The accompanying glaze combines powdered sugar with lemon and lime juices and additional 7UP, imparting a fresh, tangy sweetness that complements the cake. It is drizzled over the cooled cake to add moisture and an extra citrus punch. This cake serves about 12 slices and is a straightforward option when a lemon-lime twist is desired in a classic cake.

Though this recipe uses a boxed cake mix for convenience, a from-scratch version is available for those preferring a homemade approach, which uses butter, granulated sugar, eggs, self-rising flour, lemon juice, and 7UP. This alternative requires more preparation but yields similar citrus flavor and moistness.

Storing the cake covered at room temperature preserves freshness for several days, making it easy to prepare in advance for events. The carbonation in 7UP assists rising and tenderness, making it preferable to other sodas for this recipe.

Ingredients

Servings

For the cake:

  • 1 box yellow cake mix
  • 4 egg
  • 3/4 cup vegetable oil
  • 1 (3.4 ounce) box instant lemon pudding mix
  • 3/4 cup 7UP (see note 2)

For the glaze:

  • 2 cups powdered sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons lime juice
  • 1 tablespoon 7UP
  • 1 teaspoon lime zest

Instructions

  1. Adjust an oven rack to the middle position and preheat oven to 325 degrees. Grease a 12-cup Bundt pan well with butter.
  2. In a large bowl add the yellow cake mix, eggs, vegetable oil, lemon pudding mix, and 7UP. Stir well to combine.
  3. Pour the batter into prepared pan and bake until a toothpick inserted in the middle of the cake comes out clean with a few crumbs attached, about 45 to 55 minutes.
  4. Remove from the oven and cool completely in the pan on a wire rack. Remove cake from the Bundt pan.
  5. To make the glaze, in a medium bowl, whisk together the powdered sugar, lemon juice, lime juice, 7UP, and zest. Drizzle over the cooled cake.

Notes

  • Store leftover cake covered at room temperature for up to 4 days to maintain moisture and flavor.
  • 7UP is used for its carbonation which helps the cake rise and adds a subtle lemon-lime taste.
  • A from-scratch version of this cake features butter, sugar, eggs, self-rising flour, lemon juice, and 7UP for more homemade texture.
  • This recipe yields about 12 slices, making it suitable for medium-sized gatherings.
