African Pepper Soup
Description
This African Pepper Soup recipe calls for 675 grams of beef or goat meat cut into pieces, combined with minced onions, garlic, ginger, white and black pepper, dried thyme, and a stock cube. A scotch bonnet pepper adds heat, while tomato puree complements the spice with acidity and body. Water creates a broth base that is simmered until the meat is tender.
The soup's flavor is spicy and aromatic, balancing heat from the peppers and pepper spices with the earthiness of thyme and the slight pungency of garlic and ginger. The tomato concentrates during simmering to enrich the broth. Cooking methods vary: stovetop simmering takes about 30 minutes, the Instant Pot reduces meat cooking time through pressure, and slow cooker prepares the soup over several hours for a deeply developed taste. The meat becomes tender and flavorful throughout.
African Pepper Soup is often enjoyed as a light meal or appetizer, especially when served alone or alongside cassava, potatoes, or rice which extend servings. The broth’s spicy warmth suits cooler weather or when a comforting, intensely flavored soup is desired.
Note that tougher meat may require longer cooking or topping up water to maintain liquid levels. Adjust seasoning before serving. Minor variations include substituting fresh chili with flakes or powder, and adding a squeeze of lime for brightness. The Instant Pot method excludes pressure build and release times from cooking duration.
