  • 4 cucumber washed very well & cut in small chunks (discard the ends
  • 4 cups water divided
  • ½ to ¾ cup sugar adjust to taste
  • lime juice optional, juice of one large lime or more according to taste

Sugar Free version

  • cup Truvia Note: Truvia is the closest in flavor to real sugar and it dissolves well, or your favorite non calorie sweetener

Instructions

  1. In a blender, add 1 cucumber and 1 cup of water. Blend until smooth.
  2. Strain mixture through a strainer into a bowl then transfer to a pitcher. Discard the solids.
  3. Repeat the process with the remaining cucumbers.
  4. Add the sugar and mix well. If using lime juice, add it at this point and adjust sugar to taste.
  5. Cover and refrigirate for at least an hour.
  6. Serve over ice.

Notes

  • Keep the cucumber peel on for added nutrients and flavor.
  • Discard the cucumber ends before blending to avoid bitterness.
