Description

Taco Casserole begins with cooking ground beef and diced yellow onions until the beef is browned and no longer pink. After draining excess fat, a packet or measured portion of taco seasoning and water are added, cooking until liquid evaporates and the mixture thickens. Salsa is stirred in for moisture and flavor.

This seasoned beef mixture is layered in a baking dish with refried beans and shredded cheddar cheese, then baked uncovered at 350 degrees Fahrenheit. After the initial baking, it is topped with Fritos chips and returned to the oven to create a crunchy, golden topping.

Once baked, the casserole is garnished with thinly sliced romaine lettuce, diced vine tomatoes, and sliced black olives, adding freshness and textural contrast to the savory casserole. The mix of creamy refried beans, melted cheese, seasoned beef, and crunchy chip topping provides a satisfying variety.

  • 1 pound ground beef , (85/15)
  • 1 yellow onion , diced
  • 2 cups salsa
  • 3 tablespoons taco seasoning , or one packet
  • 1/2 cup water
  • 2 cans refried beans
  • 2 cups cheddar cheese , shredded
  • 2 cups Fritos chips
  • 1 cup romaine lettuce , thinly sliced
  • 1 vine tomatoes , diced
  • 1/2 cup black olives , sliced

Instructions

  1. Preheat oven to 350 degrees and spray a 9x13 baking dish with vegetable oil spray.
  2. Add the ground beef and onions to a large skillet on medium high heat and break it apart as you cook it, for 6-8 minutes, until no longer pink.
  3. Drain excess fat before adding in taco seasoning and water.
  4. Stir well and cook until water has evaporated then add in the salsa and stir.
  5. Layer the baking dish with refried beans, taco salsa mixture and cheese.
  6. Bake, uncovered for 20 minutes, top with Fritos and bake an additional 10 minutes.
  7. Top with lettuce, tomato and olives before serving.
