Air Fry Butternut Squash With Feta Cheese
Description
Butternut squash is peeled, seeded, and cut into 1-inch chunks, then seasoned with harissa powder, garlic powder, salt, and black pepper. After drizzling olive oil and tossing, the squash cooks in an air fryer at 375°F for about 20 minutes, with occasional stirring to ensure even cooking. Meanwhile, walnuts can be roasted briefly in a pan to bring out their flavor and crispness.
The result is squash that is soft inside with slightly crisped edges, carrying a warm, mildly spicy flavor from harissa and garlic. Topping the cooked squash with crumbled feta adds a creamy, salty counterpoint, while the optional walnuts introduce a toasty crunch. This combination balances flavors and textures.
It can be served as a side dish or a vegetarian main. The nuts are optional and can be substituted or omitted according to preference. Roasting nuts enhances their taste and texture and is recommended.
Cutting the squash into quarters first makes peeling and seeding easier. Stirring during cooking helps all pieces brown evenly. Using different nuts like pecans or cashews is possible, but pan roasting remains a beneficial step.
Ingredients
- 2 pounds butternut squash about medium sized.
- 1 teaspoon harissa powder
- ½ teaspoon garlic powder
- 2 tablespoons olive oil
- salt to season
- black pepper to season
- 0.88 ounce feta cheese
- walnuts optional, a handful
Instructions
- Peel, scoop the seed and cut the butternut squash into 1-inch chunks.
- Place the squash chunks in a mixing bowl. Add harissa powder, garlic, and season with salt and pepper. Stir well until all pieces are coated with spices.
- Preheat your air fryer to 190°C/ 375°F.
- Drizzle the oil over butternut squash, and stir well again.
- Arrange the squash pieces in the air fryer basket.
- And cook the squash for about 20 minutes. Don’t forget to check and flip the butternut every now and again. I do it about three times to ensure all pieces are cooked evenly.
- While the butternut squash is cooking, roast the walnuts on a frying pan until crispy. Chop to your desired size.
- When the squash is cooked, place it on a serving dish. Then crumble the feta cheese over it and scatter chopped walnuts on it.
Notes
- Quarter the butternut squash before peeling and seeding to simplify preparation.
- Pan roast nuts like walnuts, pecans, or cashews before adding to the dish to enhance their flavor and crispness.
- Nuts are optional and can be omitted or substituted based on preference.
- Stir the squash a few times during air frying to ensure even cooking and browning.
