Air Fryer Aubergine
Description
Air Fryer Aubergine involves cutting large eggplants into evenly sized strips to ensure uniform cooking. These strips are coated thoroughly in olive oil mixed with savory dry seasonings including garlic granules, onion powder, and dried oregano, along with sea salt and black pepper. The seasoned pieces are placed in an air fryer basket ensuring not to overcrowd for adequate air flow.
Cooking at 190°C (375°F) for 15 minutes with a basket shake halfway through produces aubergine with a tender interior and a crisp exterior that captures the infused seasonings. The air fryer method reduces oil usage compared to frying and helps concentrate the flavors.
The recipe suggests optionally drizzling honey over the aubergine before serving to introduce a sticky sweetness that contrasts with the savory spices. It's best served immediately to maintain crisp texture as it may lose crispness if left standing too long.
Ingredients
- 2 eggplant large, aka aubergine
- 2 tablespoon olive oil
- 1 teaspoon garlic granules
- 0.5 teaspoon onion powder
- 0.5 teaspoon oregano dried
- 1 pinch salt sea salt
- 1 pinch black pepper ground
Instructions
- Slice the top and bottom off 2 Aubergine (eggplant). Cut in half lengthways, then into strips.
- Put the sliced aubergine into a bowl. Drizzle over 2 tablespoon Olive oil and add 1 teaspoon Garlic granules, 0.5 teaspoon Onion powder, 0.5 teaspoon Dried oregano, 1 pinch Sea salt and 1 pinch Ground black pepper.
- Mix well to coat all of the aubergine.
- Put the strips into your air fryer. Cook at 190°C/375°F for 15 minutes, shaking halfway through.
Notes
- Cut aubergine strips uniformly to ensure even cooking.
- Mix ingredients by hand to coat aubergine completely with oil and seasonings.
- Do not overcrowd the air fryer basket to promote crisping rather than steaming.
- Shake the basket midway through cooking for even browning.
- Optionally drizzle a little honey before serving to add a sticky sweet layer.
- Serve immediately after cooking to retain crispiness.
