Air Fryer Bacon Wrapped Pork Tenderloin
Description
The recipe centers around a pork tenderloin wrapped in bacon, seasoned with kosher salt and black pepper. The preparation involves rolling the meat jelly-roll style with carefully arranged bacon slices, which are tied with kitchen string to keep the shape intact during cooking. The tenderloin is cut into halves for fitting the air fryer basket and cooked until reaching an internal temperature between 145-150°F, ensuring safe doneness with a juicy texture. Turning the meat halfway through cooking promotes even crisping of the bacon.
The result is a pork tenderloin with crispy, smoky bacon on the outside and tender, juicy pork inside. It is recommended to let the meat rest after cooking before slicing into 12 servings. The recipe suggests optional accompaniments such as grain mustard, fig jam, or sweet chile sauce, which offer additional layers of flavor and contrast to the savory bacon.
This dish is suitable for those who appreciate pork as a centerpiece and enjoy the added richness and texture that bacon imparts. The air fryer method offers a convenient alternative to traditional roasting or pan-searing while maintaining the balance of flavors and textures.
Ingredients
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper ground
- 1 pork tenderloin (about 1 1/2 lbs)
- 6 Bacon center cut strips
- cooking string
Instructions
- Season pork with salt and pepper. Lay the bacon on a cutting board to be roughly the same size as the tenderloin.
- Cut two bacon strips in half (since the ends are thinner, they don’t need a whole strip). Lay two halves next to each other, then four full strips, then the other two halves next to each other.
- Carefully lay the tenderloin over the bacon. Tightly roll up the pork jelly-roll style, starting with a long side. Tie the roast at 2- inch intervals with kitchen string each about 12-inches long.
- Carefully cut the tenderloin in half to fit in the air fryer.
- Put the tenderloin inside and fry at 400 F for 20 minutes turning halfway, until an instant read thermometer inserted into the center reads 145-150 F. Let the pork rest about 5 minutes before slicing. Slice into 12 slices.
Notes
- Tie the bacon-wrapped tenderloin securely with kitchen string to keep its shape during cooking.
- Rest the pork for about 5 minutes after cooking to retain juices before slicing.
- Optional sauces like grain mustard, fig jam, or sweet chile sauce complement the dish well.
