Make the best baked potatoes with this easy Air Fryer Baked Potato recipe that's quicker than baking potatoes in the oven. The outside is salty, crispy and so delicious, while the inside is hot and fluffy, perfect for filling with all of your favorite baked potato toppings!

Ingredients
- 2 pounds Russet potatoes either four ½ pound potatoes or two 1 pound potatoes
- 1 tablespoon olive oil
- ½ teaspoon salt

Instructions
- Scrub the potatoes clean, then pierce all over, 10-12 times, with a fork.
- Coat the potatoes in olive oil, then sprinkle them on all sides with salt.
- Place in an air fryer basket, with space between each potato for the hot air to move around it.
- Cook at 400°F for 30 minutes.
- Open the air fryer, flip the potatoes with tongs and continue cooking for an additional 5-10 minutes, for smaller potatoes, or 15-20 minutes for larger potatoes.
- Use tongs or an oven mitt to gently squeeze the potatoes.
- If the potato is not quite done, continue cooking in increments of 5 minutes until it is soft to the touch. Cooking time varies depending on the size, larger potatoes will take longer to cook.
- Once tender, remove from the air fryer and serve immediately.
Notes
- Keep cooked potatoes in an airtight container in the refrigerator for up to 5 days.
- You can also seal the leftovers in a freezer-safe airtight container and freeze for up to 6 months.
- To reheat baked potatoes, you can use the microwave or put them back in the air fryer. I recommend 2 minutes in the microwave or 5 minutes in the air fryer at 400°F.
- I do not recommend wrapping the potatoes in foil before air frying them. Wrapping the potatoes in foil means all of the moisture is kept inside and this will steam the potatoes instead of baking them, and you won’t get the wonderful crispy skin that makes these air fryer baked potatoes so great!
- While the recipe instructions are for 2 pounds of baked potatoes, you can easily use this recipe to make just one or two baked potatoes, no matter the size.
