Description
The Air Fryer Brisket uses a small tray to evenly coat the brisket with extra virgin olive oil and a mixture of dried herbs and seasoning. The oil helps the herbs adhere to the beef and creates a seasoned surface during cooking. Cooking in the air fryer at 180°C for a total of 45 minutes, flipping midway, gently roasts the brisket to medium doneness. The air fryer’s circulating heat crisps the exterior slightly while retaining juiciness inside.
Once cooked, the brisket is rested for 5-10 minutes to allow the meat fibers to relax, improving tenderness and juiciness. Slicing after resting reveals an herb-seasoned outer crust with a tender interior. This method provides a convenient way to cook brisket without the need for long slow roasting or smoking.
Serving can be straightforward by slicing and pairing with side dishes or incorporating into sandwiches. The size and seasoning blend provide a well-rounded beef flavor accented by classic herb notes.

- 1.2 kg beef brisket
- 1 Tbsp extra virgin olive oil
- 2 Tsp basil
- 2 Tsp parsley
- 2 Tsp rosemary
- 2 Tsp thyme
- salt

Instructions
- Place your beef brisket in a tray as this is the easiest way to coat your brisket in the seasoning and grab any bits of seasoning that have fallen off.
- Then smoother with extra virgin olive oil and then smoother with the seasonings. The dried seasonings will then stick to the oil and stay on the beef as it cooks.
- If some comes off, then use the tray to roll the beef and grab any stray bits of seasoning.
- Load into the air fryer basket and cook for 30 minutes at 180c/360f.
- Turn over and cook for a final 15 minutes at the same temperature. It will now be a medium.
- Then transfer to a chopping board for resting and remove the string.
- Once the brisket has rested for 5-10 minutes slice before serving.
Notes
- Use a small tray to season the brisket easily and catch any loose seasoning, minimizing mess.
- If the brisket sticks to the top inside the air fryer, press it down to prevent this.
- Rest the cooked brisket for 5-10 minutes before slicing to retain juices.
