Delicious and crispy air fryer carrots and potatoes. You will love roasted carrots and roasted potatoes air fried together for an easy dinner side dish.

Ingredients

Servings
  • 450 g baby potatoes
  • 450 g baby carrots
  • 1 Tbsp extra virgin olive oil
  • 1 Tsp dried thyme
  • 1 Tsp dried parsley
  • 2 Tsp mixed dried herbs
  • 2 Tsp salted butter optional

Instructions

  1. Clean and scrub if needed, the potatoes and carrots and then place them into a mixing bowl. Add the oil and seasonings and mix well with your hands.
  2. Then place the potatoes and carrots into the air fryer basket and spread them out. This will help for an even cook.
  3. Air fry for 20 minutes at 180c/360f or until fork tender. Do a fork test to double check and add a couple of extra minutes if needed.
  4. Then remove from the air fryer, place on a serving dish and add a little butter.

Notes

  • Seasoning. You can mix and match the seasonings depending on the time of the year and what you are serving with your potatoes and carrots. For Christmas try them with some honey for that glazed honey carrots and potato flavour.
