Description

This recipe starts with boneless, skinless chicken breasts sliced and pounded to approximately 1/4 inch thickness for quick and even cooking. The cutlets are marinated with salt, garlic powder, Italian seasoning, and Italian dressing for at least an hour, which imparts flavor and helps tenderize the meat. After marinating, the cutlets are dipped in beaten egg, then coated with a blend of whole wheat breadcrumbs and Parmesan cheese.

The coated cutlets are lightly sprayed with olive oil and cooked in batches in a preheated air fryer at 400°F. They are air fried for about 4 minutes on each side until a golden brown crust forms and the chicken is cooked through.   • 2 oz chicken breast trimmed, boneless skinless
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/4 cup Italian dressing
  • 3/4 cup whole wheat breadcrumbs homemade or store bought, seasoned
  • 2 tablespoons Parmesan Cheese or Romano cheese, grated
  • 1 teaspoon Italian seasoning dry
  • 1 egg beaten, large
  • olive oil spray form

Instructions

  1. Slice the chicken breasts in half lengthwise to make 4 cutlets. Pound to make 1/4 inch thick.
  2. In a shallow bowl, season with salt, garlic powder, Italian seasoning and marinade with Italian dressing at least 1 hour (the longer the better).
  3. Combine breadcrumbs and parmesan cheese in a shallow bowl. Place egg in another shallow bowl. Dip the chicken into the egg, then the breadcrumb mixture. Place on a work surface and spray both sides with oil.
  4. In a single layer, in batches if needed, transfer the cutlets to the air fryer basket and air fryer 400F 4 minutes until the top is golden, then flip and spray the other side, air fry another 3 to 4 minutes, until golden and cooked through.
